Ham and cheese somehow don't do this shop justice. They do sell mostly ham and cheese, but what ham! What cheese! We are of course talking about Jamon Serrano in all its guises and derivatives, from the very best Bellota to the simpler Reserva hams. The various preparations that derive from these pigs once their legs and shoulders have been hived off are no less gorgeous. Everything from chorizos and salchichons to morcillas, pates, lomo, and the various flavoured fats and spreads. Spanish cheeses aren't so well known outside of the country, which is a pity, as Andalucia produces some of the richest and most exquisite goats' and sheep's cheeses imaginable. From soft delicate fluffy orbs soaked in rich virgin oils to hard tangy mature crumbly roundels of rich sheep's cheese. Azabache carries the best of everything pig, goat and sheep that can be preserved, dried, canned, salted, fermented and matured...
