Spanish Contemporary Fine Dining
Not for nothing is this very attractive restaurant called Garum. It looks onto the actual remains of the Roman garum factory next to the Roman Theatre. Garum was the mainstay of the local economy created during the empire, a salted fish paste that gained international fame and for which remains of its production have been found throughout southern Spain. Fish holds sway in this fine place, but the tuna not the anchovy is king. The signature dish is a fish platter featuring a tartare, tataki, seared fillet, salted fillet and crunchy skinned tuna bonbon. The decor is cool and modern with lovely trompe l'oeil details, and the terrace sits in front of three of Malaga's most emblematic buildings. 2000 years of history and gastronomy, right there as you sample the delights. several ways of tuna, an octopus with sautee potatoes, a selection of freshly made croquettes, risottos of various kinds. Modern Mediterranean cuisine at the top of its game and a very special setting.
