Spanish Tapas
Kortxo is a Basque style pun on the Spanish word for cork. Yes, this is Basque cuisine, the pintxo style. Fish, shellfish and meats in small portions, often mounted on bread or skewered, cooked immaculately, or served cold. The difference from tapas is not in the portions or style of eating, but the in the different preparations. There's more pickling of things, marinading of seafood and fish, mayonnaise and delicate sauces. And they've got tapas as well! The best of the north and the south under one roof. The great thing about a pintxo bar is that much of the food is all on display on platters groaning wth colour and interesting shapes. The interior is modern and stylish, the menu varied and delivered with a visual flourish you'd expect from a Basque establishment. Nothing beats this kind of eating for sheer variety, dozens of little flavour bombs and a visual treat from start to finish.
